Prepare the Dough
In a bowl, combine warm water and yeast. Let it sit for 5 minutes until frothy. In a separate large bowl, mix flour, sugar, and salt. Cut in the butter until crumbly.
First Rise
Place the dough in a greased bowl, cover with a clean cloth, and let it rise in a warm place for approximately 1 hour, or until doubled in size.
Shape the Pastries
After the first rise, punch down the dough and roll it out on a floured surface. Cut into desired shapes (e.g., circles, squares) and fill with your choice of filling (e.g., fruit preserves, chocolate).
Second Rise
Place the shaped pastries on a baking sheet, cover, and let them rise again for 30 minutes.
Bake
Preheat the oven to 375°F (190°C). Bake the pastries for 15-20 minutes or until golden brown.
Cool and Serve
Allow the pastries to cool slightly before serving. Enjoy them warm or at room temperature.
