Prepare Glass & Rim

Chill and rim

Chill a rocks or coupe glass by filling it with ice and cold water; set aside while you mix the cocktail. Pour out the chilling water, rub the lime wedge around the outer edge of the glass rim (or the inner edge if you prefer), then dip the wet rim into a shallow dish with kosher salt or li hing powder to coat. Set the prepared glass aside.

Combine ingredients

In a cocktail shaker, add blanco tequila (2 oz), fresh lime juice (1 oz), and agave syrup (0.5 oz).

Add ice and shake

Add the ice for shaking (about 1 cup) to the shaker, secure the lid, and shake vigorously for 12–15 seconds until the outside of the shaker is very cold and slightly frosted.

Prepare serving

Discard the ice used to chill the glass (if any). Fill the rimmed glass with fresh serving ice (about 1 cup) or leave it up to preference for served 'on the rocks' or slightly less ice for a stronger sip.

Strain and serve

Double-strain the shaken mixture into the prepared glass over the fresh ice using a Hawthorne strainer and a fine mesh strainer (or just the shaker strainer) to catch small ice shards and pulp.

Garnish

Express a lime wedge over the drink (squeeze and rub the oils across the surface), then drop the wedge onto the rim or into the glass as a garnish.
