Melt the Chocolate

Chop the dark chocolate into small pieces and place it in a heatproof bowl. Melt the chocolate using a double boiler method or microwave in 20-second intervals, stirring in between until smooth. Allow it to cool slightly.

Whip the Cream

In a large mixing bowl, pour in the heavy cream. Using an electric mixer, whip the cream until soft peaks form. Be careful not to over-whip. Set aside.

Separate the Eggs

Separate the egg whites from the yolks, placing the yolks in a bowl and the whites in a separate clean bowl.

Mix Egg Yolks and Sugar

Add granulated sugar to the bowl with egg yolks. Whisk together until the mixture is pale and thick. Stir in the melted chocolate and vanilla extract until fully combined.

Beat Egg Whites

With a clean whisk or electric mixer, beat the egg whites until stiff peaks form. Add a pinch of salt to stabilize the mixture.

Combine Mixtures

Gently fold the whipped cream into the chocolate mixture until just combined. Then, carefully fold in the beaten egg whites to the mixture, being cautious not to deflate the mixture.

Chilling and Serving

Chill the Mousse

Spoon the mousse into individual serving cups or a large bowl. Cover with plastic wrap and refrigerate for at least 2 hours or until set.

Garnish and Serve

Before serving, optionally top with whipped cream, chocolate shavings, and fresh berries. Serve chilled.
