Tofu Preparation
Press the Tofu
Wrap the firm tofu in a clean kitchen towel and place a weight on top to press out excess moisture for about 30 minutes.
Cut and Coat the Tofu
After pressing, cut the tofu into slabs or cubes. Toss the tofu pieces in cornstarch until well coated.
Fry the Tofu
Heat vegetable oil in a large skillet over medium heat. Once hot, add the coated tofu pieces and fry for about 3-4 minutes on each side, until golden brown and crispy.
Vegan Paprika Ranch
Soak the Cashews
Soak the cashews in water for at least 2 hours or overnight for a creamier texture. Drain and rinse before use.
Blend the Ingredients
In a blender, combine the soaked cashews, water, dill, paprika, garlic powder, onion powder, salt, and lemon juice. Blend until smooth and creamy.
Sandwich Assembly
Toast the Rolls
Slice the Amoroso's rolls in half and toast them until golden brown.
Prepare the Veggies
Wash and chop the romaine lettuce and tomato into slices.
Assemble the Sandwich
Spread a generous amount of the vegan paprika ranch on the bottom half of each roll. Place the Buffalo tofu on top, followed by romaine lettuce and tomato slices. Close the sandwich with the top half of the roll.
