Prepare the Potatoes
Wash and peel the russet potatoes. Cut them into long strips, approximately 1/4 inch thick, ensuring they are uniform for even cooking.

Soak the Potatoes
Place the cut potato strips in a large bowl of cold water and soak for at least 30 minutes. This helps to remove excess starch and makes the fries crispier.

Heat the Oil
In a deep pot or fryer, heat the vegetable oil to 350°F (175°C). Use a thermometer to ensure the oil is at the right temperature for frying.

Dry the Potatoes
After soaking, drain the potatoes and pat them dry with paper towels to remove excess moisture.

Fry the Potatoes
Carefully add the dried potato strips to the hot oil in batches, being careful not to overcrowd the pot. Fry for about 5-7 minutes or until they are golden brown and crispy.

Drain and Season
Once cooked, remove the fries from the oil and place them on a plate lined with paper towels to drain excess oil. While they are still hot, sprinkle with salt, paprika, and garlic powder to taste.
