    Prepare the Oven-Dried Tomatoes

    Preheat the oven to 120°C (250°F). Slice tomatoes in half, drizzle with olive oil, sprinkle with salt and pepper. Place on a baking sheet and roast for 2-3 hours until dried but still slightly chewy.

    Grill the Garlic

    Mince the garlic cloves and sauté in a pan over medium heat with 1 tablespoon of olive oil until golden and fragrant, about 3-4 minutes. Set aside.

    Prepare the Salad

    In a large bowl, toss the mixed greens with the grilled garlic, balsamic reduction, and the remaining tablespoon of olive oil. Season with salt and pepper to taste.

    Warm the Goat Cheese

    Preheat the oven to 180°C (350°F). Slice the goat cheese into rounds and place on a baking sheet. Bake for about 5-7 minutes until warm and soft.

    Assemble the Salad

    On a plate, arrange the mixed greens, top with the oven-dried tomatoes, and place warm goat cheese rounds on top. Serve with crostini on the side.
