Truffle Potato Balls

Method

Preparation

  1. 1

    Prepare the Potatoes

Boil the potatoes in salted water until tender, about 15-20 minutes. Drain and let cool slightly.

  2. 2

    Mash and Mix

In a large bowl, mash the boiled potatoes until smooth. Add the crumbled chorizo, truffle oil, salt, and black pepper. Mix until well combined.

  3. 3

    Shape the Balls

Take a small portion of the potato mixture and form it into a ball, about the size of a golf ball. Repeat until all the mixture is used.

  4. 4

    Cook the Potato Balls

Heat olive oil in a skillet over medium heat. Fry the potato balls until golden brown and crisp on all sides, about 5-7 minutes.

  5. 5

    Serve

Serve the truffle potato balls hot, topped with guacamole, grated Pecorino Romano cheese, and a sprinkle of chopped parsley. Accompany with garlic crostini on the side.
