Cook Chorizo
In a large skillet, heat 1 tablespoon of olive oil over medium heat. Add the chorizo and cook until browned, about 5 minutes. Remove from the skillet and set aside.

Add Asparagus
Add the chopped asparagus to the skillet and cook for an additional 2-3 minutes.

Toast Rice
Stir in the arborio rice and cook for 1-2 minutes until the rice is lightly toasted.

Deglaze with Wine
Pour in the white wine and cook, stirring constantly, until the wine is mostly absorbed.

Cook Risotto
Gradually add the chicken broth, one ladle at a time, stirring frequently. Wait until the broth is mostly absorbed before adding the next ladle. Continue this process until the rice is creamy and al dente, about 18-20 minutes.

Finish Risotto
Stir back in the cooked chorizo and crumbled queso fresco. Season with salt and black pepper to taste.
