    Cook Fingerling Potatoes

    Boil fingerling potatoes in salted water for about 15 minutes or until tender. Drain and set aside.

    In a food processor, combine parsley, capers, garlic, olive oil, and lemon juice. Blend until smooth and set aside.

    Prepare Chipotle Aioli

    In a bowl, mix mayonnaise, chipotle peppers, and lime juice until well combined. Set aside.

    Cook Chorizo

    In a skillet, cook chorizo over medium heat until crispy. Remove from skillet and set aside.

    Grill Asparagus

    Grill asparagus until tender and slightly charred, about 5-7 minutes. Season with salt and pepper.

Cooking Scallops

    Sear Scallops

    Pat scallops dry and season with salt and pepper. Heat a pan over high heat with a bit of oil. Sear scallops for 2-3 minutes on each side until golden brown. Remove from heat.

Assembly

    Plate the Dish

    On a plate, arrange the fingerling potatoes, top with chorizo, scallops, grilled asparagus, and a handful of arugula. Drizzle with salsa verde and chipotle aioli.
