Make the Dough
In a large bowl, combine the flour and salt. Make a well in the center and add the egg, pumpkin puree, and ricotta cheese. Mix until a dough forms. Knead on a floured surface for about 5-7 minutes until smooth. Wrap in plastic wrap and let it rest for 30 minutes.

Prepare the Filling
In a separate bowl, combine the pumpkin puree, ricotta cheese, and a pinch of salt and black pepper. Mix well to create the filling.

Roll and Shape Tortellini
Divide the dough into four pieces. Roll out one piece at a time into a thin sheet. Cut into squares (about 3 inches). Place a small spoonful of the filling in the center of each square. Fold the dough over to form a triangle and press the edges to seal. Bring the two corners of the triangle together to form the tortellini shape.

Cook the Tortellini
Bring a large pot of salted water to a boil. Add the tortellini in batches and cook for about 3-4 minutes, or until they float to the surface. Remove with a slotted spoon and set aside.

Combine and Serve
Add the cooked tortellini to the brown butter sauce, tossing gently to coat. Serve topped with chopped hazelnuts and grated Parmesan cheese.
