    Prepare the Mashed Potatoes

    In a large pot, boil the cubed potatoes in salted water until tender, about 15-20 minutes. Drain and return to the pot.

    Mash the Potatoes

    Add milk, salt, and pepper to the potatoes and mash until smooth. Set aside and keep warm.

    Cook the Greens

    In a large skillet, heat a little olive oil over medium heat. Add the wilted greens and sauté until just wilted, about 2-3 minutes. Remove from the skillet and set aside.

    Pan-Seared Salmon

    Season the salmon fillets with salt and black pepper. In the same skillet, heat olive oil over medium-high heat. Place the salmon fillets skin-side down and sear for about 4-5 minutes until golden brown.

    Finish the Salmon

    Flip the salmon fillets and add butter and minced garlic to the skillet. Cook for an additional 3-4 minutes, basting the salmon with the melted butter. Add lemon juice in the last minute of cooking.

    Serve

    Plate the mashed potatoes, top with the pan-seared salmon, and serve with sautéed greens. Drizzle lemon butter sauce over the salmon and garnish with chopped parsley.
