    Prepare the Potatoes

    Preheat your oven to 425°F (220°C). Wash and cut the potatoes into wedges. Toss them with olive oil, salt, and black pepper. Spread them on a baking sheet and roast for about 25-30 minutes, or until crispy and golden brown, turning halfway through.

    Cook the Hanger Steak

    While the potatoes are roasting, season the hanger steak with salt and black pepper. Heat a skillet over medium-high heat, add olive oil, and sear the steak for 4-5 minutes on each side for medium-rare. Remove from heat and let it rest for 5 minutes before slicing.

    Blanch the Broccoli Rabe

    In a pot of boiling water, blanch the broccoli rabe for 2-3 minutes, then immediately transfer to an ice bath. Drain and set aside.

    Sauté the Broccoli Rabe

    In the same skillet used for the steak, add the butter and sauté the broccoli rabe until heated through, about 2-3 minutes. Drizzle with truffle oil before serving.

    Plate the Dish

    Slice the hanger steak and serve it with crispy truffle potatoes and sautéed broccoli rabe. Drizzle the demi-glace over the steak for extra flavor.
