    Prepare the Chicken

    Preheat the oven to 425°F (220°C). Pat the chicken halves dry with paper towels. Rub olive oil over the chicken and season with salt, pepper, rosemary, and thyme.

    Roast the Chicken

    Place the chicken halves skin-side up in a roasting pan. Roast in the preheated oven for about 45-50 minutes, or until the internal temperature reaches 165°F (75°C) and the skin is golden brown.

    Prepare the Mushrooms

    While the chicken is roasting, heat a tablespoon of olive oil in a skillet over medium heat. Add the sliced mushrooms and minced garlic. Sauté until the mushrooms are golden brown and tender, about 5-7 minutes.

    Blanch the Broccoli Rabe

    In a separate pot, bring salted water to a boil. Add the broccoli rabe and blanch for about 3 minutes. Drain and set aside.

    Serve

    Once the chicken is done, let it rest for 10 minutes. Serve the roasted chicken with a side of mashed potatoes, sautéed mushrooms, and blanched broccoli rabe.
