    Prepare the Brussels Sprouts

    Preheat your oven to 400°F (200°C). Trim the ends of the Brussels sprouts and remove any yellow outer leaves. Cut them in half.

    Season and Roast

    In a large bowl, toss the Brussels sprouts with olive oil, salt, and black pepper. Spread them out on a baking sheet in a single layer. Roast for 25-30 minutes, or until crispy and golden brown, flipping halfway through.

    Add Pecorino Cheese

    Remove the Brussels sprouts from the oven and immediately sprinkle with grated Pecorino cheese. Toss to combine.

Caramelized Onion Aioli

    Caramelize the Onions

    In a skillet, heat olive oil over medium heat. Add the sliced onion and cook, stirring occasionally, until caramelized (about 15-20 minutes). Add minced garlic in the last 2 minutes.

    Mix the Aioli

    In a bowl, combine mayonnaise, caramelized onion and garlic mixture, lemon juice, salt, and black pepper. Mix until smooth.
