Make the Pappardelle
In a large bowl, mix the flour and salt. Make a well in the center and add the eggs. Gradually mix the flour into the eggs until a dough forms. Knead the dough for about 10 minutes until smooth. Wrap in plastic wrap and let it rest for 30 minutes.

Roll out the Pasta
After resting, divide the dough into four pieces. Roll each piece out into thin sheets using a pasta machine or a rolling pin. Cut the sheets into wide strips (about 1 inch) to form pappardelle. Dust with flour to prevent sticking.

Cook the Shrimp
In a large skillet, heat olive oil over medium heat. Add minced garlic and sauté for about 1 minute until fragrant. Add shrimp and cook for 3-4 minutes until pink and cooked through. Remove shrimp and set aside.

Prepare the Chipotle Cream Sauce
In the same skillet, add minced chipotle peppers and heavy cream. Stir to combine and simmer for 5 minutes. Add lime juice and grated Parmesan cheese, stirring until the cheese is melted and the sauce is creamy.

Combine Pasta and Sauce
Cook the pappardelle in boiling salted water for 2-3 minutes until al dente. Drain and add to the skillet with the sauce. Toss to coat the pasta evenly. Add the cooked shrimp and mix well.

Serve the chipotle shrimp pasta garnished with fresh cilantro. Enjoy your meal!
