Method

Preparing the Chicken

    Pound the Chicken

    Place the chicken breasts between two sheets of plastic wrap and pound them to about 1/2 inch thickness.

    Breading the Chicken

    Set up a breading station with three shallow bowls: one with flour, one with beaten eggs, and one with breadcrumbs mixed with salt and pepper.

    Coating the Chicken

    Dip each chicken breast first in the flour, then in the egg, and finally in the breadcrumb mixture, pressing gently to adhere.

    Frying the Chicken

    In a large skillet, heat olive oil over medium-high heat. Add the breaded chicken and cook for about 4-5 minutes on each side or until golden brown and cooked through.

Making the Salad and Vinaigrette

    Prepare the Vinaigrette

    Finely chop the shallots and whisk together with red wine vinegar, olive oil, salt, and black pepper in a small bowl.

    Assemble the Salad

    In a large bowl, combine arugula, halved cherry tomatoes, and sliced cucumber. Drizzle with shallot vinaigrette and toss gently.

    Serve with Burrata

    Place the salad on plates, top with pieces of burrata cheese, and serve alongside the Chicken Milanese.
