    Cook the Cavatelli

    Bring a large pot of salted water to a boil. Add the cavatelli and cook according to package instructions until al dente. Reserve 1 cup of pasta water, then drain and set aside.

    Prepare the Sausage

    In a large skillet, heat olive oil over medium heat. Add the minced garlic and red pepper flakes, sautéing for about 1 minute until fragrant.

    Add Sausage

    Add the spicy Italian sausage to the skillet. Cook, breaking it apart with a wooden spoon, until browned and cooked through, about 5-7 minutes.

    Incorporate Vodka

    Pour in the vodka and bring to a simmer. Allow it to cook for about 2-3 minutes to reduce slightly.

    Add Cream and Peas

    Stir in the heavy cream and peas. Cook for an additional 3-4 minutes until the sauce thickens slightly. Season with salt and black pepper to taste.

    Add the drained cavatelli to the skillet and toss to combine, adding reserved pasta water as needed to achieve desired sauce consistency.
