    Cook the Pasta

    In a large pot, bring salted water to a boil. Add the bucatini and cook according to package instructions until al dente. Reserve 1 cup of pasta water, then drain the pasta.

    Prepare the Cheese and Pepper Mixture

    While the pasta is cooking, mix the grated Pecorino Romano and Parmesan cheese in a bowl. Set aside.

    Combine Pasta and Cheese

    In a large skillet over medium heat, add the olive oil and freshly ground black pepper. Toast the pepper for about 1 minute until fragrant. Add the drained pasta to the skillet, and toss to coat in the oil and pepper.

    Create the Sauce

    Remove the skillet from heat and gradually add the cheese mixture, tossing continuously to combine. Add reserved pasta water a little at a time to create a creamy sauce, ensuring the cheese melts evenly and coats the pasta.

    Taste and adjust seasoning with salt if necessary. Serve immediately, garnished with extra cheese and black pepper if desired.
