Braised Short Rib Directions

    Prepare the Short Ribs

    Preheat your oven to 300°F (150°C). Season the short ribs with salt and black pepper.

    Sear the Ribs

    In a large Dutch oven, heat the olive oil over medium-high heat. Sear the short ribs on all sides until browned, about 3-4 minutes per side. Remove and set aside.

    Sauté Vegetables

    In the same pot, add the chopped onion, carrot, and celery. Cook until softened, about 5 minutes. Add minced garlic and cook for an additional minute.

    Deglaze the Pot

    Pour in the red wine, scraping up any browned bits from the bottom. Allow the wine to reduce by half.

    Add Broth and Herbs

    Add the beef broth, fresh thyme, and bay leaves into the pot. Return the short ribs to the pot.

    Braise the Ribs

    Cover the pot and transfer it to the oven. Braise for 3 hours, or until the meat is tender and falling off the bone.

    Cook Cipollini Onions

    In a skillet, melt the butter over medium heat. Add the cipollini onions and sauté until caramelized, about 10-15 minutes.

    Serve

    Remove the short ribs from the oven. Serve with mashed potatoes, grilled asparagus, and top with the crispy cipollini onions.
