Method

Cake Preparation

  1. 1

    Preheat the Oven

Preheat your oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.

  2. 2

    Mix Dry Ingredients

In a large bowl, whisk together flour, sugar, baking powder, and salt.

  3. 3

    Cream Butter and Sugar

In another bowl, cream the softened butter with the sugar until light and fluffy.

  4. 4

    Add Eggs and Vanilla

Add eggs one at a time to the butter mixture, beating well after each addition. Stir in vanilla extract.

  5. 5

    Combine Mixtures

Gradually add the dry ingredients to the wet mixture, alternating with the milk. Mix until just combined.

  6. 6

    Bake the Cake

Divide the batter evenly between the prepared cake pans and bake for 25-30 minutes, or until a toothpick inserted comes out clean.

  7. 7

    Cool the Cakes

Let the cakes cool in the pans for 10 minutes before transferring to wire racks to cool completely.

Chocolate Icing Preparation

  1. 8

    Make the Icing

In a bowl, mix together cocoa powder, softened butter, and powdered sugar. Gradually add milk and vanilla extract until smooth and spreadable.

Raspberry Coulis Preparation

  1. 9

    Prepare the Coulis

In a saucepan over medium heat, combine fresh raspberries, sugar, and lemon juice. Cook until the raspberries break down and the mixture thickens, about 10 minutes. Strain if desired.

Whipped Cream Preparation

  1. 10

    Whip the Cream

In a bowl, whip the heavy cream with powdered sugar and vanilla extract until soft peaks form.

Assembly

  1. 11

    Assemble the Cake

Place one cake layer on a serving plate, spread a layer of chocolate icing, and then top with the second layer. Frost the top and sides of the cake with the remaining chocolate icing.

  2. 12

    Serve

Serve slices of the cake drizzled with raspberry coulis and topped with whipped cream.
