Chicken Preparation

Prepare the Chicken

Preheat the oven to 400°F (200°C). Rub the Mount Lehman half chicken with olive oil, salt, black pepper, garlic powder, and fresh thyme. Place the chicken in a roasting pan.

Roast the Chicken

Roast the chicken in the preheated oven for about 1 hour, or until the internal temperature reaches 165°F (75°C) and the skin is golden brown. Baste with pan juices halfway through.

Prepare the Potatoes

Peel and chop the potatoes. Boil them in salted water until fork-tender, about 15-20 minutes.

Mash the Potatoes

Drain the potatoes and return them to the pot. Add buttermilk, butter, salt, and black pepper. Mash until smooth and creamy.

Vegetable Preparation

Cook the Vegetables

In a skillet, melt butter over medium heat. Add peas and carrots, season with salt, and sauté for about 5-7 minutes until tender.

Pan Jus Preparation

Make the Jus

In the same roasting pan used for the chicken, add chicken stock and white wine. Scrape up any browned bits from the bottom of the pan. Add fresh thyme and simmer for about 10 minutes to reduce slightly. Strain if desired.
