Cooking the Mussels

Sauté the Base

In a large pot, heat olive oil over medium heat. Add minced garlic and sliced fennel, sautéing until softened, about 5 minutes.

Add Tomatoes and Wine

Stir in diced tomatoes and white wine. Bring to a simmer and let it cook for about 10 minutes to allow the flavors to meld.

Cook the Mussels

Add the mussels to the pot, cover, and cook for about 5-7 minutes or until the mussels have opened. Discard any that do not open.

Finish and Season

Stir in chopped parsley, and season with salt and black pepper to taste. Remove from heat.

Making the Frites

Prepare the Potatoes

Preheat the oven to 425°F (220°C). Toss the matchstick potatoes in a bowl with olive oil, paprika, cayenne pepper, and salt until evenly coated.

Bake the Frites

Spread the coated potatoes in a single layer on a baking sheet. Bake for 25-30 minutes, flipping halfway through, until crispy and golden brown.
