Prepare the Bacon

In a large skillet over medium heat, cook the bacon until crispy. Remove the bacon, crumble it, and set aside. Leave some bacon grease in the skillet.

Sauté the Jalapeño

In the same skillet with bacon grease, add the diced jalapeño and sauté for about 2-3 minutes until softened.

Combine Ingredients

Add the fresh corn kernels to the skillet and stir to combine with the jalapeño. Pour in the heavy cream and lime juice. Season with salt and black pepper to taste.

Add Bacon and Cheese

Stir in the crumbled bacon and 1 cup of the shredded cheddar cheese. Mix until well combined.

Gratin the Corn Mixture

Transfer the mixture into a baking dish. Sprinkle the remaining 0.5 cup of cheddar cheese on top.

Bake

Preheat the oven to 375°F (190°C). Bake the dish for about 25-30 minutes until the cheese is melted and bubbly.

Remove from the oven, garnish with chopped cilantro, and serve warm.
