Cook the Pork Belly
Preheat the oven to 400°F (200°C). Cut the pork belly into small cubes. In a bowl, toss the pork belly with olive oil, salt, and black pepper. Spread on a baking sheet and roast for 20-25 minutes until crispy.
Roasted Garlic Dressing

Prepare Roasted Garlic
While the pork belly is roasting, cut the top off the head of garlic, drizzle with olive oil, wrap in foil, and roast in the oven for 30 minutes. Once cooled, squeeze out the cloves and mash them.

Mix the Dressing
In a bowl, combine the roasted garlic, mayo, lemon juice, Dijon mustard, Worcestershire sauce, salt, and black pepper. Mix until smooth.
Assembling the Salad

Combine Ingredients
In a large bowl, chop the romaine lettuce, add the cherry tomatoes, and sprinkle with Parmesan cheese. Add the warm pork belly croutons and drizzle with the roasted garlic dressing. Toss gently to combine.
