Method
Roasting Bone Marrow

Preheat Oven
Preheat your oven to 450°F (230°C).

Prepare Bone Marrow
Place the bone marrow bones on a baking sheet. Season with salt and black pepper.

Roast in the preheated oven for about 15-20 minutes, until the marrow is soft and bubbly.
Making Cheesy Bread

Prepare Bread
While the marrow is roasting, spread butter on one side of each slice of sourdough bread.

Add Cheese
Sprinkle shredded cheese on top of each slice of toasted bread. Cover the skillet and allow the cheese to melt.
Making Arugula Salad

Combine Salad Ingredients
In a large bowl, combine arugula, olive oil, lemon juice, salt, and pepper.

Toss Salad
Gently toss the salad until the arugula is well coated with the dressing.
Assembly

To serve, place a slice of cheesy bread on a plate, spoon the roasted bone marrow on top, and serve with a side of arugula salad.
