    Preheat and prepare ham

    Preheat the oven to 325°F (165°C). Remove the ham from packaging and discard any netting. Rinse briefly under cold water and pat dry with paper towels. Place the ham, flat side down, in a shallow roasting pan large enough to catch drips.

    Score the fat

    If the ham has a fat cap, trim any excessively thick portions, leaving about 1/4–1/2 inch of fat. Using a sharp knife, score the fat in a diamond pattern about 1/3 inch deep, spacing cuts about 1 inch apart. This helps the glaze adhere and lets heat penetrate more evenly.

    Optional studding

    If using whole cloves, press them into the intersections of the diamond cuts (or in a pattern you like). Studding is optional but gives a classic flavor and appearance.

    Make the glaze

    In a small saucepan combine brown sugar, Dijon mustard, maple syrup, apple cider or juice, apple cider vinegar, ground cloves, and black pepper. Bring the mixture to a gentle simmer over medium heat, stirring until the sugar dissolves. Reduce heat and simmer 3–5 minutes until slightly thickened. Remove from heat and keep warm.

    Roasting setup

    Arrange the halved onion, carrot and celery in the bottom of the roasting pan around the ham. Add 1 cup of water to the pan to create steam and catch drippings. Tent the ham loosely with aluminum foil, shiny side out, to keep it from browning too quickly.

    Heat-through

    Because most Virginia hams are fully cooked and salt-cured, heat the ham gently until an internal temperature of 120–125°F (49–52°C) for sliceable, warm meat or 140°F (60°C) if you prefer hotter service. As a guideline, roast about 10–12 minutes per pound (22–26 minutes per kg) at 325°F (165°C). For a 2.5 kg ham this is roughly 55–65 minutes; adjust for your ham weight. Start checking temperature about 30 minutes before estimated finish time.

    Glaze application

    Remove the foil for the last 20–30 minutes of cooking. Brush a generous coat of the warm glaze over the ham. Return to oven uncovered. Repeat glazing every 6–8 minutes until the glaze sets and forms a shiny, sticky coating (typically 2–3 applications). Watch closely to prevent burning the sugar.

    Resting

    When the ham reaches the desired internal temperature and the glaze is set, remove the ham from the oven. Tent loosely with foil and let it rest 15–20 minutes before carving. Resting lets juices redistribute and makes carving easier.

Aromatics and Serving

    While the ham rests, transfer pan juices and roasted aromatics to a small saucepan. Skim excess fat from the surface if desired. Bring to a simmer and reduce a few minutes to concentrate flavor, adjusting seasoning with a splash more apple juice or a pinch of sugar if needed. Strain if you prefer a smooth sauce.

    Carve the ham against the grain in thin slices for best texture. Arrange slices on a platter, spoon a little of the reduced pan sauce over slices if desired, and garnish with chopped fresh parsley. Serve remaining sauce on the side.
