Raspberry Sorbet (makes 4 scoops)

Make simple syrup

Combine 1 cup water and 3 tablespoons sugar in a small saucepan. Bring to a gentle simmer over medium heat, stirring until sugar dissolves completely, about 2–3 minutes. Remove from heat and let cool to room temperature (about 10–15 minutes) or chill briefly in refrigerator until cool.

Prepare fruit purée

If using frozen raspberries, thaw until soft. Place raspberries and a pinch of salt in a blender or food processor. Add the cooled simple syrup and 1 tablespoon fresh lemon juice. Purée on high until very smooth, about 30–45 seconds.

Strain (optional)

For a smoother sorbet, press the purée through a fine mesh sieve into a bowl to remove seeds, using a spatula to rub pulp through. Discard seeds. If you prefer more texture, skip this step.

Chill

Cover the raspberry purée and chill in the refrigerator until thoroughly cold, at least 30 minutes. Cold base yields a better frozen texture.

Freeze in ice cream maker

Pour the chilled purée into a pre-cooled ice cream maker and freeze according to manufacturer’s instructions, usually 15–25 minutes, until it reaches a soft-serve consistency.

Firm up (optional)

For scoopable texture, transfer sorbet to a shallow airtight container and freeze for 1–2 hours until firm enough to scoop.

Serve

Scoop into four small dishes or one serving bowl. Garnish with fresh raspberries and a mint leaf if desired. Serve immediately.

Mango Sorbet (makes 4 scoops)

Make simple syrup

Combine 1 cup water and 3 tablespoons sugar in a small saucepan. Warm over medium heat, stirring until sugar dissolves, about 2–3 minutes. Remove from heat and cool to room temperature or chill briefly.

Prepare mango purée

Place 2 cups chopped ripe mango flesh, the cooled simple syrup, 1 tablespoon fresh lime juice, and a pinch of salt into a blender or food processor. Purée until completely smooth, about 30–60 seconds. Taste and add a touch more lime if needed to brighten flavor.

Chill

Cover and chill the mango purée in the refrigerator until thoroughly cold, at least 30 minutes.

Freeze in ice cream maker

Pour the chilled purée into a pre-cooled ice cream maker and freeze according to manufacturer’s instructions, usually 15–25 minutes, until it reaches a soft-serve consistency.

Optional garnish

Add a sprig of fresh mint and a few whole raspberries or a thin mango slice to each serving for color and aroma. If sorbet is very hard from the freezer, let sit at room temperature 5 minutes before scooping.
