Cook pasta

Bring a large pot of salted water (about 1 tbsp salt per 4 quarts) to a boil. Add 12 oz linguine and cook until just al dente according to package instructions (usually 9–11 minutes). Reserve 1 cup pasta cooking water, then drain pasta and set aside.

Sauté aromatics

While pasta cooks, heat 2 tbsp extra-virgin olive oil and 1 tbsp unsalted butter in a large sauté pan over medium heat. Add 1/2 cup thinly sliced red onion and cook 3–4 minutes until softened and translucent. Add 4 minced garlic cloves and cook 30–45 seconds until fragrant, stirring to avoid burning.

Build sauce

Add 1.5 cups halved cherry tomatoes and 2 tbsp drained capers to the pan. Cook 2–3 minutes until tomatoes begin to soften. Pour in 1/2 cup dry white wine and scrape up any browned bits from the bottom of the pan. Let the wine reduce by about half, 2–3 minutes.

Finish sauce and combine

Stir in 2 tbsp fresh lemon juice, 1 tsp lemon zest, 1 tsp salt and 1/2 tsp black pepper. Add 4 cups baby spinach in batches, stirring until wilted. Add the drained linguine to the pan along with 1 tbsp unsalted butter, 3/4 cup grated/shaved Parmesan, and up to 1 cup reserved pasta water as needed to loosen and create a silky sauce. Toss gently until pasta is evenly coated and sauce clings to noodles. Adjust seasoning to taste.

Season shrimp

Pat 1 lb large peeled and deveined shrimp dry with paper towels. In a bowl toss shrimp with 1 tbsp olive oil, 2 tsp Cajun seasoning, 1/2 tsp smoked paprika, 1/2 tsp garlic powder and 1/2 tsp salt until evenly coated. Let rest 5 minutes.

Grill or sauté shrimp

Preheat a grill or grill pan over medium-high heat (or heat a heavy skillet). Cook shrimp 2–3 minutes per side until opaque and slightly charred. Remove from heat and squeeze a lemon wedge over them. Keep warm.

Alternative pan-sear

If using a skillet, heat 1 tsp oil over medium-high heat and sear shrimp in a single layer without crowding, 2–3 minutes per side.

Assembly & Garnish

Divide the linguine among plates or serve family-style in the sauté pan. Top with the Cajun grilled shrimp arranged on top of the pasta.

Finish with remaining 1 tbsp butter (optional, melted over the pasta), extra 1/4 cup shaved Parmesan, 2 tbsp chopped fresh parsley, and a sprinkle of red pepper flakes if using. Serve with lemon wedges on the side.
