Prep the mozzarella

If using one large mozzarella ball, slice into 8 even discs about 1/2 inch thick. Pat each slice dry with paper towels to remove surface moisture — this prevents splatter and helps coating adhere.

Set up breading station

Place the flour in a shallow bowl and season with 1/2 tsp salt and 1/4 tsp black pepper. In a second shallow bowl whisk the eggs with 1/2 cup buttermilk until smooth. In a third bowl combine panko, semolina (or extra panko) and remaining 1/4 tsp salt and 1/4 tsp black pepper; press the mixture with your fingers to break up big flakes so it adheres evenly.

Double-coat the cheese

Working one slice at a time: dredge a mozzarella slice in seasoned flour, shaking off excess; dip into the egg-buttermilk wash; press into the panko mixture to fully coat. For a sturdier crust, repeat the egg wash and panko step a second time (double-coat). Place breaded slices on a parchment-lined tray and chill in the fridge for 15–20 minutes to set the crust.

Fry until golden

Heat neutral oil in a heavy skillet or shallow pot to 350°F (175°C). If you don't have a thermometer, heat until a small cube of bread browns in about 30–45 seconds. Fry 2–3 slices at a time (do not crowd) for 1.5–2.5 minutes per side, until deep golden brown. Use a slotted spatula to transfer to a wire rack set over a tray or paper towels to drain. Keep warm in a low oven (200°F / 95°C) while you finish the rest.

Nashville Hot Ranch Sauce

Combine mayonnaise, 1/4 cup buttermilk, apple cider vinegar, hot sauce, smoked and sweet paprika, cayenne, brown sugar, garlic powder, onion powder, and kosher salt in a bowl. Whisk until smooth and homogeneous. Taste and adjust heat or tang: add more cayenne or chili oil for heat, more buttermilk to thin, or a touch more vinegar for brightness.

Warm the butter and chili oil together (microwave for 10–15 seconds or gently in a small saucepan) and slowly whisk into the sauce mixture to create a glossy, slightly spicy ranch emulsion. Reserve about 2 tablespoons of the sauce to drizzle on the finished dish and toss the rest with the hot fried mozzarella while the cheese is still warm so the crust picks up the sauce flavor.

Finish & Garnish

Tossing and plating: Place the warm fried mozzarella slices in a bowl or shallow pan, spoon the warm Nashville hot ranch over them and gently toss to coat each piece evenly without breaking the slices. Transfer to a serving plate or board.

Finish with grated Romano cheese, sprinkling evenly over the sauced mozzarella. Add the basil chiffonade across the top and finish with a light sprinkle of flaky salt. Serve immediately while warm and the center is soft but still holding shape.
