    Prepare oven and chips

    Preheat the oven to 425°F (220°C). Arrange a large ovenproof baking sheet or cast-iron skillet with a single even layer of tortilla chips, leaving some chips to overlap for stability but avoiding a single thick pile.

    Drizzle 1/2 tablespoon olive oil lightly over chips and sprinkle 1/4 tsp kosher salt and 1/4 tsp ground black pepper evenly. This helps crisp and season the chips.

    Combine shredded cheddar and Monterey Jack. Scatter half of the cheese blend evenly over the chips to create a stable base for toppings.

Grilled Vegetables (Mixed Grill)

    Prep vegetables

    Slice zucchini and yellow squash into 1/4-inch half-moons to total about 1 cup each. Core and cut the red bell pepper into 1/2-inch strips. Slice red onion into 1/2-inch wedges. Halve the baby portobello mushrooms if large. Halve the cherry tomatoes. Mince garlic.

    Place all prepared vegetables in a bowl. Add 2 tablespoons olive oil, 1/2 tsp smoked paprika, 1/4 tsp ground cumin, 1 tbsp lime juice, 1/2 tsp salt and 1/4 tsp black pepper. Toss thoroughly so everything is evenly coated.

    Grill vegetables

    Heat a grill pan or outdoor grill over medium-high heat until hot. Grill vegetables in a single layer (work in batches if needed) until they have good char marks and are tender-crisp: zucchini and squash 3–4 minutes per side, peppers and onions 4–6 minutes, mushrooms 3–4 minutes, tomatoes 1–2 minutes just until blistered. Remove and keep warm.

    When grilled, toss the vegetables gently with the minced garlic and an additional squeeze of lime if desired. Set aside.

Beans & Protein Alternatives

    In a small saucepan over medium heat, combine the drained black beans, 1/4 tsp cumin, 1/2 tsp minced chipotle in adobo (or 1/2 tsp chopped), and a splash (1–2 tbsp) of water. Warm gently, stirring occasionally, until heated through, about 4–5 minutes. Taste and adjust salt or chipotle level.

    Pat pressed tofu dry and cube. Heat a nonstick skillet over medium-high heat with 1/2 tablespoon olive oil. Add tofu cubes and sear without moving for 2–3 minutes per side until golden and crisp on as many faces as possible. Toss with a pinch of salt and a light dusting of cumin. Remove from heat.

    Combine warmed black beans and charred corn. Stir in the tofu cubes gently so the textures mingle. This mixture will serve as the protein layer on the nachos.

Assembly & Baking

    Layer nachos

    On top of the chips with the first cheese layer, distribute the grilled vegetable mixture evenly across the tray, then spoon the black bean/corn/tofu mixture in dollops across the surface. Scatter the remaining cheese evenly over all toppings to help everything bind as it melts.

    Place the baking sheet or skillet in the preheated oven and bake for 6–8 minutes, or until the cheese is completely melted and bubbling and the edges of chips are golden. For a broiled finish, switch to broil for 1–2 minutes watching closely to avoid burning.

Fresh Toppings & Garnishes

    Scatter diced avocado or spoon dollops of guacamole over the hot nachos. Add pickled red onions, sliced scallions, chopped cilantro, and jalapeño slices if using. Sprinkle crumbled cotija or feta if desired. Drizzle sour cream in lines or dollops and add hot sauce to taste. Finish with a squeeze of fresh lime over the whole tray.
