Basic Grits

    Bring liquids to a simmer

    In a medium saucepan, combine 4 cups water and 1 cup milk. Add 1 teaspoon salt. Bring the mixture to a gentle simmer over medium heat — do not let it reach a rolling boil.

    Add grits

    Slowly whisk in 1 cup coarse ground yellow grits while whisking constantly to prevent lumps.

    Cook gently

    Reduce heat to low so the grits maintain a low simmer. Cook, stirring frequently (every 2–3 minutes), for 20–25 minutes until the grits are thickened, tender, and creamy. If grits thicken too much, add up to 1/2 cup additional water or milk, a splash at a time, to reach desired consistency.

    Finish with butter and seasoning

    Remove from heat and stir in 2 tablespoons unsalted butter until melted and incorporated. Taste and adjust seasoning with additional salt if needed.

    Cheesy grits

    For cheesy grits, while grits are hot, stir in 3 ounces grated sharp cheddar and 2 tablespoons heavy cream until the cheese melts and becomes smooth. Return to very low heat for 1–2 minutes while stirring if needed to fully incorporate.

    Pepper and bacon garnish

    Stir in or sprinkle 1 teaspoon freshly ground black pepper if desired. Top servings with 4 tablespoons crumbled cooked bacon and 1 tablespoon chopped chives for texture and flavor.

    Adjust consistency and serve

    If grits have thickened while resting, stir in a splash of milk or warm water to loosen. Serve immediately while hot.
