Prepare the Milk

In a saucepan, heat the milk over medium heat until it reaches about 180°F (82°C). Stir occasionally to prevent scorching.

Cool the Milk

Remove the saucepan from heat and let the milk cool down to around 110°F (43°C). You can speed this process by placing the saucepan in a cold water bath.

Add Yogurt Starter

Once the milk has cooled, stir in the plain yogurt. Make sure it is well mixed.

Incubate the Mixture

Pour the milk and yogurt mixture into a clean container. Cover it with a lid or a clean towel and place it in a warm area (around 100°F or 38°C) for 6-12 hours. The longer it sits, the thicker and tangier it will become.

Check Consistency

After the incubation period, check the yogurt for thickness. If it has reached your desired consistency, it’s ready to be chilled.

Chill and Serve

Transfer the yogurt to the refrigerator to cool. Once chilled, stir in salt to taste, if desired. Serve plain or with your favorite toppings.
