Preparation
Prepare the Chicken
Season the chicken breasts with salt and black pepper on both sides. In a large skillet, heat 1 tablespoon of olive oil over medium-high heat. Add the chicken breasts and cook for about 6-7 minutes on each side, until golden brown and cooked through. Remove from the skillet and set aside.
Make the Sauce
Pour the Marsala wine into the skillet, scraping the bottom to deglaze. Allow it to simmer for about 3 minutes until reduced by half. Add the heavy cream and stir well. Let it simmer for another 3-4 minutes until the sauce thickens slightly.
Combine Everything
Add the cooked chicken breasts back into the skillet, along with the sweet peas. Stir to coat the chicken in the sauce and heat through for another 2-3 minutes. Adjust the seasoning with salt and pepper if needed.
Finish with Parmesan
Sprinkle the grated Parmesan cheese over the chicken and sauce. Allow it to melt slightly before serving.
