Prepare the Chicken
Season the chicken breasts with salt and pepper. Heat 1 tablespoon of olive oil in a skillet over medium heat. Cook the chicken for about 6-7 minutes on each side until fully cooked. Remove from skillet and let rest.
Cook the Shrimp
In the same skillet, add another tablespoon of olive oil. Add the jumbo shrimp and cook for 2-3 minutes on each side until they turn pink and opaque. Remove and set aside.
Make the Coconut Curry Cream Sauce
In the same skillet, add the coconut milk and curry powder. Stir well and bring to a simmer. Let it cook for about 5 minutes to thicken slightly.
Add Vegetables and Herbs
Add the julienne bell peppers and fresh basil to the sauce. Cook for an additional 2-3 minutes until the peppers are slightly tender.
Combine Chicken and Shrimp
Slice the rested chicken breasts and add them to the skillet along with the cooked shrimp. Stir to coat everything in the sauce and heat through for another 2 minutes.
Serve
Serve the California dish warm over rice or with crusty bread to soak up the sauce.
