Halibut Preparation

1. Season the Halibut

Rub the halibut fillets with olive oil and coat with Cajun seasoning.

2. Cook the Halibut

Heat a skillet over medium-high heat. Sear the seasoned halibut for about 4-5 minutes on each side until blackened and cooked through.

3. Cook the Grits

In a saucepan, bring water to a boil. Stir in the grits and salt, reduce heat to low, and cook for about 20-25 minutes, stirring occasionally.

5. Cook the Bacon

In a large pot, cook the bacon over medium heat until crispy. Remove the bacon and set aside, leaving the drippings in the pot.
