    Prep salmon

    Pat the salmon fillets dry with paper towels. Season both sides evenly with kosher salt (approx 1 tsp total) and black pepper (approx 1/2 tsp total). If fillets have skin, score skin once or twice.

    Sear salmon

    Heat 2 tablespoons olive oil in a large ovenproof skillet over medium-high heat until shimmering. Place salmon fillets skin-side down (or presentation-side down if skinless). Sear without moving 3 to 4 minutes until the edge color turns opaque about two-thirds up the fillet. Flip and sear the other side 1 to 2 minutes to brown.

    Finish in oven (optional)

    If fillets are thick and need finishing, transfer the skillet to a 400°F (200°C) oven for 4–6 minutes until salmon reaches 125–130°F for medium-rare or 135°F for medium. Remove from oven and transfer salmon to a plate, tent loosely with foil and keep warm while you make the sauce.

    Lemon squeeze

    Just before serving, squeeze the juice of the halved lemon over the plated salmon (reserve for garnish).

Creamy Sun-Dried Tomato Sauce

    Sauté aromatics

    Using the same skillet (wipe out any burned bits but keep fond), add 1 tablespoon olive oil and 1 tablespoon butter over medium heat. Add the minced garlic and chopped shallot; sauté 1 to 2 minutes until fragrant and softened but not browned.

    Add sun-dried tomatoes and deglaze

    Add the sliced sun-dried tomatoes and cook 1 minute, then pour in 1/4 cup white wine (or chicken broth) to deglaze the pan, scraping up browned bits. Cook until liquid reduces by about half, about 1–2 minutes.

    Make cream base

    Lower heat to medium-low and stir in 1 cup heavy cream. Bring just to a gentle simmer, stirring so it doesn’t scorch. Add 1 teaspoon Dijon mustard, 1/2 teaspoon dried Italian seasoning, 1/4 teaspoon red pepper flakes, 1/2 teaspoon salt, and 1/4 teaspoon black pepper. Simmer gently 3–4 minutes to thicken slightly.

    Finish sauce with cheese

    Stir in 1/2 cup grated Parmesan until melted and the sauce is smooth. Taste and adjust seasoning as needed.

Greens & Finish

    Wilt spinach

    Add the 4 cups fresh baby spinach directly to the simmering sauce in two batches, stirring each batch until wilted and incorporated, about 1–2 minutes total. The spinach will reduce significantly and become tender.

    Return salmon to skillet

    Nestle the seared salmon fillets back into the skillet on top of the sauce and spinach. Spoon sauce over the fillets and allow to warm together over low heat 1–2 minutes so flavors meld and salmon finishes to the target doneness.

    Garnish and serve

    Sprinkle chopped fresh basil (optional) and 2 tablespoons grated Parmesan over the top. Serve immediately with the lemon halves for additional squeezing, alongside a starch of choice (risotto, mashed potatoes, or crusty bread).
