Crab Cake Mixture

Prepare crabmeat
Place the lump crabmeat in a large shallow bowl. Gently pick through with your fingers to remove any stray bits of shell and to break any large lumps into uniform pieces; be careful to keep lumps where possible for texture.

Mix wet ingredients and seasonings
In a separate medium bowl, whisk together 1/2 cup mayonnaise, 1 lightly beaten egg, 1 tablespoon Dijon mustard, 1 teaspoon Worcestershire sauce, 1 tablespoon Old Bay seasoning, 1 tablespoon fresh lemon juice, 2 tablespoons finely chopped parsley, 2 tablespoons finely diced celery (if using), 2 tablespoons minced shallot (or green onion), 1/2 teaspoon salt and 1/4 teaspoon freshly ground black pepper until smooth.

Combine with crab and breadcrumbs
Fold the wet mixture gently into the crabmeat with a rubber spatula. Add 3 cups fresh breadcrumbs (or toasted panko) a little at a time and fold just until combined. Do not overmix — crab should remain in lumps. The mixture should hold together when pressed; if too loose add a tablespoon more breadcrumbs, if too dry add a teaspoon of mayonnaise.

Form cakes and chill
Portion the mixture into 8 (about 3.5–4 oz) appetizer-sized cakes or 4 larger cakes. Use a scoop or measuring cup to keep sizes even. Press gently into round patties about 3/4 inch thick. Place them on a parchment-lined tray and refrigerate uncovered for at least 30 minutes (or up to 2 hours) to firm; chilling helps them hold shape during sautéing.

Setup dredging station
Place 1/2 cup flour in a shallow dish, beaten egg in a second shallow dish, and 1 cup dry breadcrumbs or panko in a third dish. Lightly dredge each chilled crab cake in flour, tapping off excess, then dip into beaten egg, and finally press into the dry breadcrumbs to coat the exterior. Set on a tray and let the coating rest for 5 minutes to adhere.

Heat pan
In a large skillet over medium heat, add 2 tablespoons unsalted butter and 2 tablespoons neutral oil. Heat until the butter foams and the pan is hot but not smoking (about 3–4 minutes).

Cook crab cakes
Working in a single layer (do not overcrowd), place crab cakes in the skillet and cook 3–4 minutes per side until golden brown and an internal temperature of 145°F (63°C) is reached or the centers are hot and opaque. Adjust heat to prevent burning; reduce to medium-low if exterior browns too quickly. For thicker cakes, cover pan for 1–2 minutes after flipping to ensure heated through, then uncover to crisp the coating. Transfer cooked cakes to a wire rack or paper-towel-lined plate and keep warm in a 200°F (95°C) oven while you finish the rest.

Alternative: oven finish
For a gentler method: after browning 2 minutes per side, transfer the skillet (if oven-safe) or a baking sheet to a 375°F (190°C) oven and bake 6–8 minutes until heated through. This reduces flipping and helps maintain shape.

While cakes chill or cook, whisk together 1/2 cup mayonnaise, 2 tablespoons sweet dill pickle relish, 1 teaspoon fresh lemon juice, 1/2 teaspoon Dijon mustard, 1 teaspoon finely chopped capers (if using), 1/4 teaspoon salt and 1/8 teaspoon black pepper in a small bowl. Taste and adjust seasoning; refrigerate until ready to serve.
