Method

Preparation

    Preheat oven to 450°F (230°C). Arrange a rimmed baking sheet on the counter. If you have an oven-safe platter for oysters, place it on the baking sheet.

    Spread the crushed ice in a shallow serving platter or on the baking sheet rim where the oysters will be placed later to help hold shells steady when serving. Keep refrigerated until ready to serve.

    Shuck oysters if not already shucked: hold oyster with a towel, insert oyster knife at hinge, twist to pop, cut top muscle to open, and loosen bottom muscle while keeping on half-shell. Reserve oyster liquor (juice) in the shell. Trim any jagged shell edges if needed.

Make the Topping

    Toast panko (optional)

    In a small dry skillet over medium heat, add the herbed panko breadcrumbs and toast, stirring, for 2–3 minutes until lightly golden and fragrant. Transfer to a bowl to cool. This step improves texture and prevents sogginess.

    In a medium bowl combine 4 tbs extra-virgin olive oil, finely minced garlic, finely diced roasted red pepper, lemon juice, grated Parmesan, toasted herbed panko, chopped parsley, chopped oregano, red pepper flakes, salt and black pepper. Stir until evenly combined. Taste and adjust seasoning — add more lemon if you want brighter acidity or more salt to taste.

    If using, stir melted butter into the topping mixture to add richness. The mixture should be moist but not runny; the panko should bind the ingredients so it will sit on top of each oyster.

Assemble Oysters

    Arrange the shucked oysters (24) on the prepared baking sheet or oven-safe platter so they sit stable in their half-shells. If shells wobble, nestle them into the crushed ice bed or a layer of rock salt to steady them.

    Using a small spoon, divide the topping mixture evenly among the oysters — about 1 heaping teaspoon (or more) per oyster so each oyster is covered with a small mound of topping and crumbs. Sprinkle the reserved extra tablespoon Parmesan lightly over all oysters.

    Drizzle the oysters lightly with an additional 1–2 teaspoons of extra-virgin olive oil across the tray to help browning and flavor. If you like a brighter finish, add a few drops of extra lemon juice to some oysters before baking.

Bake & Finish

    Place oysters in the preheated oven on the middle rack. Bake for 8–10 minutes, until the topping is golden brown and the edges of the oyster begin to curl slightly. Watch closely after 8 minutes to avoid overcooking — oysters should remain plump and tender.

    If you prefer a more browned crust, switch oven to broil on high for 1–2 minutes after baking; keep the door ajar and watch continuously to prevent burning.

    Remove oysters from oven. Let rest 1–2 minutes. Drizzle any finishing olive oil if desired and sprinkle with the additional Parmesan and remaining chopped parsley.

    Serve oysters on the crushed ice bed with lemon wedges alongside so guests can squeeze fresh lemon over each oyster. Serve immediately while hot.
