Preparation of Chips

Prepare the Potatoes

Peel and cut the potatoes into thick fries. Rinse under cold water and pat dry.

Fry the Chips

Heat 2 cups of oil in a deep pan over medium-high heat. Once hot, add the fries in batches and fry until golden brown and crispy, about 5-7 minutes. Remove and drain on paper towels. Season with salt.

Preparation of Tartar Sauce

Mix the Ingredients

In a small bowl, combine mayonnaise, dill pickles, lemon juice, capers, salt, and black pepper. Stir well and refrigerate until ready to serve.

Prepare the Breading Station

Set up three bowls: one with flour, one with beaten eggs, and one with panko breadcrumbs mixed with salt and pepper.

Bread the Scallops

Dip each scallop first in flour, then in the egg, and finally in the panko breadcrumbs, ensuring they are well coated.

In a separate pan, heat 2 cups of oil over medium-high heat. Fry the scallops in batches for about 2-3 minutes per side until golden brown. Drain on paper towels.
