Cook the Bacon

In a large pot, cook the diced bacon over medium heat until crispy. Remove the bacon and set aside, leaving the rendered fat in the pot.

Sauté the Vegetables

In the same pot, add chopped onion and celery. Sauté for about 5 minutes until soft. Add minced garlic and cook for an additional minute.

Add Potatoes and Clam Juice

Add the diced potatoes, clam juice, dried thyme, and black pepper to the pot. Bring to a boil, then reduce heat and simmer for about 15 minutes until the potatoes are tender.

Incorporate Clams and Cream

Stir in the chopped clams and heavy cream. Allow to simmer for another 5 minutes. Adjust seasoning with salt as needed.

Finish and Serve

Stir in cooked bacon and chopped parsley before serving. Serve hot with crusty bread.
