Winemaking Process
Harvesting the Grapes
Select and harvest ripe Pinot Grigio grapes, ensuring they are free from blemishes.
Crushing
Crush the grapes gently to release the juice, keeping the skins in contact with the juice for a brief period to extract flavor.
Fermentation
Transfer the crushed grapes and juice into a fermentation vessel. Add water, yeast, and sulfites. Allow the mixture to ferment for 2-3 weeks at a controlled temperature.
Racking
Once fermentation is complete, siphon the wine off the sediment into a clean vessel, leaving the sediment behind.
Aging
Age the wine in stainless steel tanks for 2-4 months to develop its crisp, bright flavors.
Bottling
Once aging is complete, filter the wine and bottle it. Ensure bottles are sealed properly to maintain freshness.
