Preheat your oven to 400°F (200°C). Rub the filet with olive oil, salt, pepper, and garlic powder.

Cook the Filet

Place the filet in a hot skillet over medium-high heat. Sear for 3-4 minutes on each side, then transfer to the oven and roast for 10-15 minutes for medium-rare.

Roast the Potatoes

Toss baby potatoes with olive oil, rosemary, salt, and pepper. Spread on a baking sheet and roast in the oven for about 25-30 minutes until golden and tender.

In a saucepan, combine beef stock, red wine, and shallots. Simmer until reduced by half. Whisk in butter and thyme for richness.
