Prepare the Ingredients

Begin by preparing all the ingredients. Chop the onion and garlic, slice the chorizo, and clean the grelos greens.

Sear the Wild Boar

In a large pot, heat olive oil over medium-high heat. Season the wild boar loin with salt and black pepper, then sear it on all sides until browned. Remove the loin and set aside.

Cook the Aromatics

In the same pot, add the chopped onion and garlic. Sauté until translucent, about 5 minutes.

Add Chorizo and Herbs

Add the sliced Spanish chorizo, fresh thyme, and bay leaves to the pot. Cook for an additional 5 minutes, allowing the flavors to meld.

Add Liquids and Simmer

Return the wild boar loin to the pot and add the chicken broth. Bring to a boil, then reduce heat to low, cover, and let simmer for 1.5 hours.

Add Grelos and Hominy

After 1.5 hours, add the grelos greens and hominy to the pot. Stir gently and cook for an additional 30 minutes until the greens are tender.

Serve

Remove the wild boar loin and let it rest for a few minutes before slicing. Serve the sliced loin with the chorizo, hominy, and greens.
