Prepare the Lamb

Preheat the oven to 400°F (200°C). Season the lamb rack with salt, black pepper, and herbs de Provence.

Sear the Lamb

In a hot skillet, heat olive oil over medium-high heat. Sear the lamb rack on all sides until browned, about 2-3 minutes per side.

Crust the Lamb

Remove the lamb from the skillet and coat the top side with chopped pistachios, pressing them into the meat to ensure they stick.

Roast the Lamb

Place the lamb rack in a roasting pan and roast in the preheated oven for about 20-25 minutes for medium-rare, or until the internal temperature reaches 130°F (54°C). Let it rest for 10 minutes before slicing.
