Melt the Chocolate

In a microwave-safe bowl, combine the dark chocolate chips and coconut oil. Microwave in 30-second intervals, stirring in between, until fully melted and smooth.

Mix in Coffee

Add the instant coffee granules and vanilla extract to the melted chocolate, stirring until well combined.

Combine with Cereal

In a large mixing bowl, add the rice cereal and pour the chocolate-coffee mixture over it. Stir until all the cereal is evenly coated.

Add Chocolate Pearls

Gently fold in the mini chocolate pearls, ensuring they are distributed throughout the mixture.

Set in a Pan

Line an 8x8 inch pan with parchment paper. Pour the mixture into the pan and press down firmly to create an even layer.

Chill and Cut

Refrigerate the pan for at least 1 hour or until the bars are set. Once set, lift the bars out using the parchment paper and cut into squares.

Drizzle with Chocolate

Melt additional dark chocolate in a microwave-safe bowl. Drizzle over the cut bars and sprinkle with sea salt to taste.
