Prepare produce

Wash all produce thoroughly. Remove kale stems and roughly chop leaves. Peel the lemon and ginger. Core and quarter the green apple. Chop cucumber and celery into pieces small enough for your blender or juicer.

Cold-blend for body

If using a high-speed blender: add the kale, spinach, cucumber, celery, green apple, lemon, and ginger to the blender. Pour in 300 ml cold filtered water. Blend on high for 45–60 seconds until completely smooth and fiber is fully broken down. If using a cold-press juicer: feed ingredients through the juicer in the order listed, alternating leafy greens with harder produce (apple, cucumber, celery) to maximize yield.

Strain (optional)

For a smoother juice typical of a juice bar: place a fine-mesh sieve or nut milk bag over a large bowl or pitcher and pour the blended mixture through. Use a spatula or squeeze the bag to extract as much liquid as possible. Discard (or repurpose) the remaining pulp. If you prefer a full-fiber green smoothie, skip this step.

Finish & balance

Return the strained juice to a clean pitcher. Stir in 1 tsp liquid vitamin C (or natural orange concentrate) and 1 tsp raw honey or agave if you want mild sweetness. Taste and adjust: add up to another 1/2 tsp sweetener or a splash more lemon if desired.

Serve chilled

Fill a 24 oz serving cup or bottle with 8 ice cubes. Pour the finished juice over the ice, garnish with a mint sprig and 1–2 thin cucumber slices on the rim. Serve immediately.

Combine 60 ml unsweetened kefir with the grated fresh turmeric (or 1/4 tsp turmeric powder) and a pinch of freshly cracked black pepper in a small jar or shot glass. Stir or shake to combine. Serve chilled as a 2 oz shot alongside the Green Immunity Juice. Consume immediately for best probiotic benefit.

Notes & Storage

Freshly made juice is best consumed immediately for maximum nutrient and enzyme content. If you must store, keep in an airtight glass bottle in the refrigerator for up to 24 hours; shake before drinking. Pulp can be added to smoothies or used in baked goods or garden compost.
