Preparation

Measure and heat water

Measure 500 ml of filtered water for brewing and 100 ml for rinsing/temperature control. Heat the water in the kettle to between 92–96°C (195–205°F). If you don't have a thermometer, bring to a boil and let sit 30 seconds.

Weigh and grind coffee

Weigh 30 g of Three Keys whole-bean coffee. Grind to a medium-fine consistency (similar to granulated sugar) using a burr grinder. Adjust grind slightly finer if brew is watery, coarser if overly bitter.

Prepare dripper and filter

Place a #2 paper filter in the V60 dripper and set the dripper on the carafe or mug on the scale. Tare the scale to zero.

Rinse filter

Pour the 100 ml of hot water through the paper filter to rinse paper taste and preheat the dripper and vessel. Discard the rinse water from the carafe or mug.

Brewing

Add coffee

Add the 30 g of freshly ground coffee into the pre-rinsed filter. Level the grounds by gently shaking the dripper so the bed is even. Tare the scale to zero with the dripper in place.

Bloom (0:00–0:40)

Start the timer. Pour 60 g (ml) of hot water evenly over the grounds to saturate them completely. This is roughly twice the coffee weight. Allow the coffee to bloom for 30–45 seconds to release CO2 and let flavors open.

Main pours (0:40–2:20)

At about 40 seconds, pour slowly in a concentric spiral from the center outward and back, avoiding the filter edge. Add water in two or three increments to reach a total of 300 ml by 1:30–1:45. Maintain a steady, gentle flow to keep the coffee bed immersed but not overflowing.

Final pour and drawdown (2:20–3:30)

If needed, add the remaining water to reach 500 ml total, finishing pours by around 2:30. Allow the coffee to draw down until the stream drops to occasional drips; target total brew time 2:30–3:30. If brew time is under 2:30, slightly finer grind next time; if over 3:30, slightly coarser.

Serve

Remove the dripper and discard the grounds and filter. Swirl the carafe gently to homogenize the brewed coffee before pouring into a pre-warmed mug.

Optional Finishing

Black or with milk

Enjoy the brewed Three Keys coffee black to appreciate its origin flavors. If you prefer milk, steam or heat 120 ml milk and pour gently into the coffee. Add sweetener to taste (start with 1 tsp).

Storage note

Store any unused whole beans in an airtight container in a cool, dark place and grind fresh for best flavor. Brewed coffee is best enjoyed immediately; refrigerate leftovers and consume within 24 hours.
