Coffee Base
Grind and measure
Weigh 85 g of whole-bean coffee. Grind to a medium-fine consistency suitable for pour-over (similar to granulated sugar).
Heat water
Bring 1.2 liters of filtered water to 92–96°C (197–205°F). If you don't have a thermometer, bring to a boil and let sit 30 seconds.
Bloom and pour (pour-over method)
Place a paper filter in your dripper and rinse with hot water. Add the ground coffee, then pour 60 g of hot water evenly over grounds to bloom for 30–45 seconds. After the bloom, continue pouring in slow, concentric circles until you reach 1.2 liters total. Aim for a total brew time of 3:30–4:30 minutes. If using an alternative brew (French press), steep 4 minutes and plunge.
Cool
Transfer brewed coffee to a room-temperature carafe and allow to cool for 10–20 minutes. Chill in the refrigerator if you want iced coffee quickly (about 20–30 minutes).
Concentrate / Cold Brew Option
If you prefer a cold-brew concentrate instead of hot-brewed coffee: combine 120 g coarsely ground coffee with 1 liter cold filtered water in a large jar or French press. Stir to saturate grounds, cover, and steep at room temperature or in the fridge for 16–20 hours.
After steeping, press (if using French press) or strain through a fine mesh and then a paper filter to remove fines. You will have a concentrate; dilute to taste with filtered water or milk at approximately 1:1 concentrate to water for drinking strength, or 1:2 if you prefer lighter.
Finish & Serving
Prepare glasses: add about 1 cup (120–180 ml) of ice to each serving glass. For 2 servings, split 2 cups ice between glasses.
Sweeten: add 22–25 ml simple syrup (or to taste) to each glass. If using cold-brew concentrate, reduce syrup slightly as concentrate can taste smoother.
Add milk or cream: top each glass with 60 ml whole milk or 15–30 ml heavy cream depending on desired richness. Stir gently to combine. Taste and adjust sweetness or milk.
Garnish (optional): finish with a small pinch (about 0.5 tsp) of orange zest over the top for brightness and aroma.
Serve immediately with a straw or spoon. If making ahead, keep black coffee chilled and add ice and dairy at serving time to avoid dilution.
Equipment & Extras
Use a scale for accurate coffee-to-water ratio (roughly 1:14 for hot brew here). Rinse paper filters to remove papery flavors. For best results use freshly roasted beans and filtered water. Clean equipment after use to maintain flavor integrity.
