Prepare glasses & rim

Rim

Pour the coarse salt onto a small plate. Run a lime wedge around the outer rim of two rocks or coupe glasses (or one large pitcher rim if batch-making). Lightly dip the rims into the salt to coat evenly. Set glasses aside.

Mixing the MOCK‑A‑RITA

In a cocktail shaker or large mixing pitcher, combine fresh lime juice (1 cup), fresh orange juice (1/2 cup), and agave syrup (3 tablespoons). Stir or shake briefly to dissolve the agave completely into the juices.

Add the non‑alcoholic tequila alternative (1 cup) to the juice-agave mixture. If using a shaker and making single servings, add ice to the shaker now and shake vigorously for 10–12 seconds to chill and dilute slightly. For batch service, stir with ice in a mixing pitcher until chilled (about 20–30 seconds).

Add cold sparkling water or club soda (1 cup) to the chilled mixture and gently fold/stir to preserve carbonation. Taste and adjust sweetness or acidity: add up to 1 tablespoon extra agave if too tart, or 1–2 teaspoons extra lime if too sweet.

Assemble & serve

Fill the prepared glasses with ice (about 1/2 cup per glass, or top as desired). Strain the MOCK‑A‑RITA mixture evenly into the glasses, leaving some headroom for garnish.

Garnish each glass with an orange wheel or twist and a lime wedge on the rim. Serve immediately.
