Brioche-style Texas Butter Croissant

Make the dough

In a large bowl or stand mixer fitted with the paddle, whisk together 3 cups flour, 2 tsp instant yeast, 3 tbsp sugar and 1 tsp salt. In a small bowl combine 3 tbsp warm water and 3 tbsp warm whole milk (about 100–110°F / 38–43°C) and add to dry ingredients. Add 2 large eggs (beaten) and 4 tbsp room-temperature butter. Mix on low until ingredients come together, then switch to dough hook and knead 6–8 minutes until smooth and slightly tacky. If dough is too dry add up to 1 tbsp water; if too sticky, dust with up to 2 tbsp flour. The dough should be soft and slightly elastic.

First chill

Shape the dough into a rectangle, wrap in plastic, and refrigerate for 30–45 minutes to relax the gluten. Meanwhile, prepare the laminating butter block.

Prepare butter block

Place 1 cup cold unsalted butter between two pieces of parchment and beat/roll into a 7x9-inch rectangle about 1/2-inch thick. Keep chilled but pliable — not rock-hard.

Laminate (folding and layering)

On a lightly floured surface, roll the chilled dough into a 10x14-inch rectangle. Center the butter block on the dough and fold dough edges over to fully encase the butter. Seal seams. Roll gently into a 10x18-inch rectangle. Perform a letter fold (fold one third over center, then the other third over). Wrap and chill 20–30 minutes. Repeat two more times (three total turns), chilling 20–30 minutes between each turn. Maintain butter cold but workable—chill longer if butter leaks.

Shape croissants

After final chill, roll dough to about 1/4-inch thickness into a 12x18-inch rectangle. Trim edges and cut into triangles roughly 4–5 inches wide at base and 7–8 inches tall. Make a small slit at base of each triangle, gently stretch base, and roll toward tip to form a croissant. Place on parchment-lined sheet with seam side down, curve ends slightly for classic shape. Cover loosely and proof at warm area (75–80°F / 24–27°C) for 60–90 minutes until nearly doubled.

Egg wash and bake

Preheat oven to 400°F (200°C) with a rack in the center. Whisk 1 egg with 1 tbsp milk for egg wash. Brush croissants gently with egg wash. Bake for 12 minutes, then reduce oven to 375°F (190°C) and bake another 8–10 minutes until deep golden and crisp. Rotate pan halfway for even color. Internal temperature should reach ~200°F (93°C). Remove to rack to cool slightly.

Finish with Texas honey

While warm, brush each croissant lightly with 1 tsp Texas honey and sprinkle a few flakes of sea salt. Let rest 5 minutes to set.

Smoked Peach & Bourbon Compote (Texas twist)

In a medium skillet, melt 1 tbsp butter over medium heat. Add 3 cups peeled, sliced peaches, 1 tbsp light brown sugar, 1 tbsp fresh lemon juice, 1 tsp smoked paprika, and 1 tsp ground cinnamon. Cook, stirring occasionally, until peaches begin to break down, about 6–8 minutes.

Stir in 2 tbsp bourbon and continue to simmer 2–3 minutes to cook off alcohol and concentrate flavor. Reduce heat to low and simmer another 2 minutes until compote is thick but spoonable. Taste and adjust sweetness with more brown sugar if needed. Remove from heat and cool slightly; compote will thicken further as it cools.

Goat Cheese Mousse & Herb Finish

Make goat cheese mousse

Chill a medium mixing bowl and beaters briefly. Combine 6 oz fresh goat cheese, 1 cup heavy cream, 1 tsp honey, 1 tsp lemon zest and 1 tsp fresh thyme leaves in the chilled bowl. Whip on medium-high until soft peaks form and mixture is smooth and pipeable, about 2–3 minutes. Do not overwhip; it should be airy but still spreadable. Transfer to a piping bag or bowl and refrigerate until ready to assemble.

Toast pecans

In a small dry skillet over medium heat, toast 1/4 cup chopped pecans, stirring frequently, until fragrant and lightly browned, 3–4 minutes. Transfer to a plate to cool.

Rinse and lightly dress 1 cup microgreens or baby arugula with a tiny pinch of salt and a few drops of lemon if desired; keep separate for plating.

Assembly & Serve

Slice each warm croissant horizontally but not all the way through (or split fully if preferred). Spread or pipe 1–2 tablespoons of goat cheese mousse on the bottom half.

Spoon 1–2 tablespoons of smoked peach & bourbon compote over the goat cheese mousse per croissant. Scatter a few toasted pecan pieces (about 1 tsp), a few fresh thyme leaves and a small handful of microgreens or baby arugula on top.

Place croissant top back on gently. For a refined finish, dust lightly with 1 tsp powdered sugar (optional) and drizzle an extra 1 tsp Texas honey over the top. Serve warm, thinking artistry.
